Finocchiona


Finocchiona is a fermented and dried, all pork sausage. A light and aromatic salami, it's seasoned also with a light amount of chili flakes. Finocchiona originated in the Renaissance, and possibly before, in the Middle Ages. The use of fennel was an alternative to black pepper, which was very expensive at the time when fennel grew wild and abundant in the Tuscan countryside.
